Cooked on camera before it ever got written down

Hey — Curtis here. Every recipe on this site started as one of my videos. Three years of filming, a hundred-plus uploads, and the same comment kept landing under the smothered chicken, the gumbo, the lasagna: where's the written recipe? This site is the answer. Nothing here is theoretical — the quantities are what actually went in the pot on camera, the photos are frames from my own footage, and the tips are the things I said out loud while I was cooking it.

If it ever feels like a lot, don't worry — I got you. That's not a slogan, that's how every recipe here is built: ingredients listed in the order you'll actually use them, steps that are one action each so you never lose your place with raw chicken on your hands, and my notes from the video at the end, where I tell you what I'd do differently or what to swap if your store doesn't have it.

Where to start

If you're new here, start where my kitchen started:

  • Southern smothered chicken and rice — the dish that built this whole thing. Crispy-seared thighs in a rich onion gravy, over rice.
  • Cajun gumbo — the real one, with a deep dark roux and the holy trinity. Takes patience, not talent. I walk you through every shade of that roux.
  • Stovetop lasagna — all the cheesy comfort, no oven, one pan. The weeknight cheat I stand behind completely.
  • Marry Me Chicken — seared chicken in a creamy sun-dried tomato Parmesan sauce. The name explains itself.

How this kitchen is organized

Everything lives in four shelves, and they're honest ones. Smothered & Southern is the soul of the channel — gravies, rice, the Sunday-dinner canon. Comfort Pastas is where the creamy one-pan dinners live. Crowd Food is what you make when people are coming over — wings, egg rolls, the stuff that disappears first. And Skillet Suppers is the weeknight shelf: one pan, on the table fast. If you only remember one rule from me, make it this one — prep everything before the heat comes on, and taste as you go. The seasonings in these recipes are a starting point, not the law.
