Ingredients
- 1/2 white onion (diced)
- 2 pounds ground beef
- 1/2 teaspoon salt (beef seasoning)
- 1/2 teaspoon ground black pepper (beef seasoning)
- Worcestershire sauce, to taste
- 1 cup shredded cheddar cheese
- 1/2 cup diced pickles
- 15–20 egg roll (or spring roll) wrappers
- 1/4 cup cold water (for sealing the wrappers)
- vegetable oil (for frying)
- 1 cup mayonnaise (for the dipping sauce)
- 1/2 cup ketchup (for the dipping sauce)
- 2 teaspoons mustard, yellow or Dijon (for the dipping sauce)
- 1/4 cup yellow onion, diced (for the dipping sauce)
- 1/4 cup dill pickles, diced (for the dipping sauce)
- 1/2 teaspoon garlic powder (for the dipping sauce)
How to Make It
- Dice 1/2 white onion.
- Add the onions to a hot pan and saute them down until they start to turn brown.
- Add 2 pounds ground beef to the pan.
- Season the beef with 1/2 teaspoon salt and 1/2 teaspoon ground black pepper.
- Cook, breaking the beef up, until it starts to turn brown.
- Stir in 1/2 cup diced pickles.
- Add Worcestershire sauce, to taste.
- Stir in 1 cup shredded cheddar cheese.
- Set the filling aside.
- Place a scoop of the filling in the center of an egg roll wrapper.
- Dip a finger in the cold water and wet the edges of the wrapper to seal the sides.
- Roll the wrapper up tightly around the filling, folding in the sides.
- Repeat with the remaining filling — you'll need 15–20 wrappers.
- Heat vegetable oil in a pan for frying.
- Place each egg roll flap-side down in the oil so it doesn't pop open.
- Rotate the rolls every few seconds and stay at the stove — they brown really fast.
- Remove the egg rolls once they are brown all over.
- Make the dipping sauce: stir together 1 cup mayonnaise, 1/2 cup ketchup, 2 teaspoons mustard, 1/4 cup diced yellow onion, 1/4 cup diced dill pickles, and 1/2 teaspoon garlic powder.
- Serve the egg rolls with the dipping sauce.

Why this works
The filling is completely cooked before it ever touches a wrapper — onions browned first, beef browned on top of them, pickles and cheddar stirred in while the pan is still hot. So the fry has exactly one job: crisping the shell — which is why the doneness call in the video is purely visual. The other half is the seal-and-fry order: plain cold water on the wrapper edges, then each roll goes into the oil flap-side down. That's the whole trick to keeping them from popping open.
