Cheesy Cajun Crab Dip (Baked Game-Night Appetizer)
This dip started as a quick Instagram reel back in 2022, and it's stayed in my game-night rotation ever since. I start with the Cajun trinity — onions, bell peppers, and celery — season it hard, then melt in cream cheese, a pound of lump crab, and a big handful of cheese before baking it off at 375°F. Scoop it up with toasted baguette and watch it disappear.
The build happens in stages. The trinity softens in olive oil first, then the Cajun blend, the all-purpose seasoning, and Old Bay go in together so they toast into the vegetables instead of sitting on top. Worcestershire sweats it down further, and then chicken broth goes in — not to make this a soup, but to lift the seasoning stuck to the bottom of the pan before the cream cheese arrives.
From there it's a fold: room-temperature cream cheese first so it melts in smooth, then hot sauce and lemon juice for brightness, the lump crab, and all three cheeses — mozzarella, Colby Jack, and Parmesan. It goes into an oven-safe skillet and bakes at 375°F for 20 to 25 minutes, finished with parsley and a plate of toasted baguette.

Curtis's Tips
- I keep all the ingredients in the caption box, so save this recipe for later — it should most definitely be added to your game night menu.
- For the Cajun seasoning, I use Slap Ya Mama.
- Make sure the cream cheese is at room temperature so it mixes in smooth.
- The chicken broth is just there to lift up all that seasoning stuck in the pan — don't skip it.
- You can add any hot sauce that you like — I went with Truff, but go with whoever you like.
Why this works
This dip works because the seasoning builds into the vegetables before the cheese ever shows up. The trinity softens first, then the Cajun blend, the all-purpose seasoning, and Old Bay toast right along with it, followed by Worcestershire to sweat things down further. The chicken broth isn't there to loosen the dip — it lifts the seasoned fond off the bottom of the pan so none of it gets left behind. Room-temperature cream cheese folds in without lumps, the lump crab stays in big pieces instead of breaking apart, and the three-cheese mix melts together across the top during the 375°F bake.
FAQ
Do I have to add the chicken broth if I'm making this as a dip, not a soup?
Yes — don't skip it. It's there to lift the seasoning stuck to the bottom of the pan after the trinity and spices cook down, so that flavor ends up in the dip instead of scraped into the trash.
Can I use a different hot sauce than Truff?
Any hot sauce you like works — I went with Truff for this batch, but the recipe doesn't depend on that specific bottle.
Does the cream cheese really need to come to room temperature first?
Yes. Room-temperature cream cheese mixes in smooth instead of leaving unmelted lumps through the dip.
What kind of crab meat should I use?
I used jumbo lump crab meat in the video — a pound of lump crab meat is what goes into the mix.
