This is a weeknight staple built on one pan and big Creole flavor. Chorizo browns off first, then the garlic, onions, and a mix of green and red bell peppers go in to soften.   • chorizo

  • 1 cup long-grain rice, uncooked

How to Make It

  1. Oil a large oven-safe pan and set it on the stove to heat up.
  2. Add the chorizo and cook, breaking it down, until it is no longer pink in the middle.
  3. Stir in the garlic and onion.
  4. Add the green and red bell peppers and mix everything together.
  5. Saute the vegetables for about 3 to 5 minutes, until softened.
  6. Add the rice and toast it in the pan for about 4 to 5 minutes.
  7. Season with paprika, Creole seasoning, salt, and pepper, stirring until evenly blended.
  8. Slowly pour in the chicken stock, scraping up any rice stuck to the bottom so everything cooks evenly.
