Crab Stuffed Tilapia (Deep-Fried, Creole Seasoned)
This deep-fried, crab-stuffed tilapia comes from one of my early Instagram reels, and it still delivers every time I make it. I take two tilapia fillets, sandwich a creamy crab-and-spinach filling between them, pin them shut with toothpicks, then bread and deep fry the whole thing until it's golden and crisp. The filling stays rich and cheesy inside while the cornmeal crust does its thing on the outside. And before anybody starts — if you don't like tilapia, use catfish.

Ingredients
- tilapia fillets (used in pairs — the filling is sandwiched between two fillets; swap in catfish if you don't like tilapia — see Tips)
- Creole seasoning, to taste
- cream cheese, room temperature
- fresh spinach (or frozen — up to you)
- jumbo crab meat
- all-purpose seasoning, to taste
- lemon juice, to taste
- Parmesan cheese, to taste
- egg wash (beaten egg)
- cornmeal, for dredging
- oil, for deep frying
How to Make It
- Season the tilapia fillets with Creole seasoning and set them to the side.
- Add the room-temperature cream cheese to a bowl.
- Add the spinach (fresh or frozen) and the jumbo crab meat.
- Season the filling with the all-purpose seasoning.
- Add the lemon juice and the Parmesan cheese, then mix everything in really well.
- Spread the filling evenly over a tilapia fillet.
- Top with a second fillet and pin the fillets together with toothpicks, making sure all the sides are sealed.
- Dip each stuffed fillet in the egg wash.
- Dredge each fillet in cornmeal until fully coated.
- Poke some holes in each fillet so it can cook throughout.
- Deep fry at 350°F for about 10 to 15 minutes.
- Take out the toothpicks and enjoy.
