Crispy Honey Butter Chicken Bites (Sweet & Salty, Fried)
These crispy honey butter chicken bites started as an Instagram reel back in 2022, and they've stayed in my rotation ever since. Bite-sized chicken thighs get an ice-cold flour-and-cornstarch batter so they fry up shatter-crisp, then I toss them in a quick honey butter sauce that's equal parts sweet and salty. The whole trick is getting them really crispy before they ever touch the sauce, and serving them right away while they're at their best.
When I filmed the original reel, the point was that you don't need a deep fryer for these — just a skillet with about two inches of oil and one bowl of batter. That batter is the part worth stealing: flour, cornstarch, and a little baking soda mixed with genuinely ice-cold water. The cold is the whole game — it's the tip I push hardest in the video.
This one's for nights you're feeding people who hover — bite-sized, glazed, and gone before they reach a plate. The sauce is just butter, sugar, soy sauce, and honey, and it comes together while the fried chicken drains.

- 1 tsp paprika
- 1/2 cup all-purpose flour

Honey butter sauce
- 4 tbsp butter
- 2 tbsp white sugar
- 2 tbsp soy sauce
- 2 tbsp honey
How to Make It
- Cut 4 boneless, skinless chicken thighs into 1-inch cubes and place them in a large bowl.
- Season the chicken with 1 tsp salt, 1 tsp black pepper, 1 tsp garlic powder, and 1 tsp paprika.
- Add 1/2 cup flour, 1/2 cup cornstarch, 1/2 tsp baking soda, and 1/2 cup ice-cold water to the same bowl.
- Mix well so every piece is evenly coated in the batter.
- Heat about 2 inches of vegetable oil in a large skillet over medium-high heat to 350°F.
- Carefully place the chicken pieces into the hot oil.
- Fry for about 8-10 minutes, flipping halfway through, until golden brown and crispy on each side (165°F in the middle).
- Drain the fried chicken on paper towels and keep warm.
- In a separate skillet, add 4 tbsp butter, 2 tbsp white sugar, 2 tbsp soy sauce, and 2 tbsp honey.
- Heat over medium heat, stirring frequently, until bubbly.
- Let the sauce bubble for 1 minute, then remove from the heat.
- Add the fried chicken to the sauce and stir well to evenly coat.
- Garnish with fresh parsley if you like, and serve immediately.
Curtis's Tips
- The water for the batter needs to be ice cold — that cold flour-cornstarch-baking soda batter is what gets these really crispy.
- I fry these at 350 degrees Fahrenheit — just make sure they're really crispy before they go anywhere near the sauce.
- The chicken should be at 165 degrees in the middle. Depending on how hot your oil is it could cook quicker, so test the temperature once they start to golden.
- Once the sauce starts to thicken up, that's when you toss the chicken in.
- Serve them right away — that's when they're at their crispiest.

Why this works
The crunch is decided before the chicken touches oil: ice-cold water hitting the flour-cornstarch-baking soda mix is the crisping trick I call out directly, and the follow-through is frying at 350°F until each side is golden and genuinely crispy — the bites have to be sturdy enough to survive the sauce. That sauce has its own timing: butter, sugar, soy sauce, and honey bubble for a minute, and once it starts to thicken, off the heat and in goes the chicken for an even coat.
- Ice-cold water — non-negotiable; the cold batter is what I credit the crisp to on camera.
- Soy sauce — the salty half of the glaze, against the honey, butter, and sugar.
FAQ
How do I know when the chicken bites are done?
Golden brown and crispy on each side, and 165°F in the middle — that's about 8-10 minutes at 350°F, flipping halfway. Oil heat varies, so they could cook quicker; start checking the temperature once they begin to golden.
When does the chicken go into the sauce?
Once the sauce starts to thicken up — that's the cue. The sauce heats over medium until bubbly, gets one minute of bubbling, then comes off the heat for the toss. Just make sure the bites are really crispy before they go anywhere near it.
Can I make these ahead of time?
Honestly, no — this is a cook-and-eat dish. I say it in the video: serve them right away, because that's when they're at their crispiest. I don't cover reheating in the reel.
Do you use chicken thighs or breasts?
Thighs — 4 boneless, skinless ones cut into 1-inch cubes. The fry time and the 165°F check are built around pieces that size, and I don't make a breast version in this one.
